يهدف هذه العمل الي تطوير منتج متخمرجديد يشبه الزبادي مدعم بجنين القمح . عزّزت إضافة ​​جنين القمح من تكوين الحموضة أثناء التخمير، وزادت من لزوجة المنتجات المُتخمّرة. كما يُسهم جنين القمح في تعزيز القيمة الغذائية لهذه المنتجات ، بالإضافة إلى التأثيرات العلاجية المُحتملة التي يتصف بها جنين القمح المُتخمر بدون أي تأثير سلبي علي تركيب المنتج وجودته . ايضا يمكن أن يكون لهذه المنتجات آثار إيجابية على صناعة الألبان من حيث تكاليف مكوناتها وتطوير سوق المنتجات اللبنية المتخمرة.

The objective of this work was to develop a novel yoghurt like fermented product fortified with wheat germ (WG). The addition of WG slurry enhanced acid development during fermentation and increased the viscosity of the fermented products. WG would contribute the nutritive value of fermented product in addition to potential therapeutic effects which have been reported for fermented wheat germ without any adverse effect on the product composition and quality . The products could have a positive impacts for the dairy industry in terms of its formulation costs and expansion of the fermented milk market.
